Rachel’s Oatmeal (and Chocolate Chip) Cookies

These cookies are a favourite at our house; really simple to make, and crazy-delicious. Sammi makes them often.  They’re supposed to be plain oatmeal cookies, but when you add chocolate chips, something magic happens.  I can’t remember ever having made these without chocolate chips.


1 cup Flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup butter
1/2 cup white sugar
1/2 cup brown sugar
1 egg
1 teaspoon vanilla extract
1/2 cup rolled oats
dark chocolate chips (as many as you like)


Preheat oven to 374F.
In a medium bowl, sift together flour, baking powder, and baking soda.
In another bowl, beat together butter, brown and white sugar, egg, and vanilla.
Stir the flour mixture into the butter mixture.
Drop onto an ungreased baking tray.
Bake 10-12 minutes.
Makes 2-4 dozen, depending on how big you make them.
